The people of West Azerbaijan are very fond of walnut halva and it’s one of their main snacks at dinners and parties such as Yalda night. To prepare it, natural and nutritious materials such as walnuts, grape juice, etc. are used. For this reason, it is very useful for Ramadan and cold days of the year and gives good energy to the body.
To prepare walnut halva, first they heat the grape juice, sugar and glucose in a copper pot, then after boiling the ingredients, they add the Chubak plant. The mixture is stirred in a special device such as a mixer for two to three hours to obtain a firm and clear substance. After this stage, walnuts and sometimes pistachios are added to it.
