Nogha (or Nougat), a delicious souvenir from Tabriz, has a delightful smell and sweet taste. In fact, it is one of the traditional confections of the Middle East and Southern Europe. It is said that the word Nogha (Nougat) is derived from the Occitan language, a branch of the Romance language group, meaning ‘nut bread.’ Different countries produce various kinds of nougat— in Iran, they are commonly known as the Gaz of Isfahan and Nogha of Tabriz. Nogha is usually made with egg whites, honey or sugar, vanilla, walnut, and powdered sugar, and in some kinds, served between two wafers. These sweets will stay fresh and last for a long time.

To prepare it, natural and nutritious materials such as walnuts, grape juice, etc. are used. For this reason, it is very useful for Ramadan and cold days of the year and gives good energy to the body.
To prepare walnut halva, first they heat the grape juice, sugar and glucose in a copper pot, then after boiling the ingredients, they add the Chubak plant. The mixture is stirred in a special device such as a mixer for two to three hours to obtain a firm and clear substance. After this stage, walnuts and sometimes pistachios are added to it.
