Nogha (or Nougat), a delicious souvenir from Tabriz, has a delightful smell and sweet taste. In fact, it is one of the traditional confections of the Middle East and Southern Europe. It is said that the word Nogha (Nougat) is derived from the Occitan language, a branch of the Romance language group, meaning ‘nut bread.’ Different countries produce various kinds of nougat— in Iran, they are commonly known as the Gaz of Isfahan and Nogha of Tabriz. Nogha is usually made with egg whites, honey or sugar, vanilla, walnut, and powdered sugar, and in some kinds, served between two wafers. These sweets will stay fresh and last for a long time.
